Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 1 cup butter, softened
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • (One cook said really good but not lemony enough and added the zest of a full lemon to make them really tangy. If you add more lemon juice they can get too runny, but you do need to cook this longer than 20 minutes - 25-28).
