  • Frosting:
  • 4 eggs
  • 3/4 cup veg. oil
  • 1 1/2 cups white sugar
  • 2 tsp vanilla extract
  • 2 cups whole wheat flour
  • 2 tsp baking soda2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans
  • 1/4 cup butter,softened
  • 1 (8 ox) package cream cheese softened
  • 2 cups confec. sugar
  • 1 tsp vanilla extract
  • 1 cup chopped pecans


Preparation time 30mins
Cooking time 150mins


Step 1

Preheat oven to 350. Grease and flour a 9x13 pan.
In a bow.,beat eggs,oil,white sugar and vanilla. Mix in flour,baking soda,baking powder,salt and cinnamon. Stir in carrots. Fold in pecans. Pour into pan.
Bake for 40-45 min or until toothpick comes out clean. Let cool in pan for 10 min.
For the frosting, combine butter,cheese,confec sugar and 1 tsp vanilla. Beat until smooth and creamy. Frost the cooled cake,Sprinkle nuts on top.
