Ingredients
- 1 clove garlic; minced
- 1/4 cup onion; chopped
- 1/2 container grape tomatoes; 1/2 pint
- 1/4 3 ounce jar capers; drained
- 1 tablespoon dried parsley
- 2 tablespoon oliveoil; divided
- 2 perfect portion salmon fillet; about 6 oz each
- 1/4 teaspoon Salt
- pepper to taste

Step 1
Preheat oven to 450°F. Add garlic, onion, tomatoes, capers and parsley to
bowl; stir to combine.
Coat bottom of cast-iron skillet or oven proof pan with 1 tablespoon oil.
Season both sides of salmon with salt and pepper; center in pan, skinned
side down. Pour tomato-caper mixture along each side of salmon; drizzle
remaining oil over salmon.
Place skillet in oven; roast about 20 minutes until internal temp reaches
130 degrees. Remove pan using oven mitts; serve.
