Chili-Corn Mashed Potatos

Ingredients
- 3/4 - 1 cup frozen whole kernel corn, thawed
- 2 1/2 cups peeled and cubed baking potato
- 3 Tbs fat free sour cream
- 3 Tbs skim milk
- 1 Tbs stick butter
- 1/2 tsp chili powder
- 1/4 tsp salt
- 1/8 tsp ground cumin

Preparation
Step 1
Cook corn according to package directions. Place potato in sauce pan, cover with water and bring to a boil. Cover, reduce heat & simmer until tender. Drain and return to pan. Beat with a mixer at medium speed for 1 minute. Add all other ingredients except corn and beat until smooth. Stir in corn.
