Grilled Cilantro Cod

  • 4 (6 ounce) cod fillets
  • ¼ cup fresh cilantro
  • ½ cup extra-virgin olive oil
  • 1 garlic clove, chopped
  • Juice of 1 lemon or lime
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon sugar
  • Salt and pepper, to taste
  • Cedar plank

Step 1

Preheat grill to medium-high (350°F to 400°F). Brush fish with olive oil and season with salt and pepper to taste. Place fillets on a cedar plank and place plank on grill. Grill, covered, 10 to 12 minutes or until fish flakes easily with a fork.

Meanwhile, for sauce, in a blender combine cilantro, oil, garlic, lemon or lime juice, red pepper flakes, sugar and 1 tablespoon hot water; blend until smooth.

Spoon cilantro sauce over fillets and serve with grilled yellow squash.
