Ingredients
- 2 Tbl. Minced shallots
- 1/4 cup Balsamic vinegar
- 1 tsp. Whole grain mustard
- Salt
- Freshly ground black pepper
- 1/2 cup Olive oil
- 4 cups Organic baby Kale
- 1 yellow bell pepper, diced
- 1/2 cup cooked red quinoa
- Handful chopped walnuts, toasted
- 2 sliced blood oranges
- Handful sunflower seeds
Details
Preparation
Step 1
In a small bowl, combine the shallots, balsamic vinegar, mustard, and a pinch of salt and pepper. Slowly add the olive oil and whisk together.
In a large bowl, toss together the kale, bell pepper, quinoa, and walnuts. Drizzle on 1/3 cup of the vinaigrette and top with the orange slices and sunflower seeds.
