Ingredients
- Juice and grated rind of 1 lemon
- 1 cup sugar
- 1 egg, separated
- 3 tbsp. flour
- 1 cup milk
- 1 tbsp. melted btter
- Pastry for single-crust, 9" pie

Preparation
Step 1
Mix the flour and sugar; add the lemon juice, rind and egg yolk. Stir in the milk and melted butter. Beat the egg white until stiff, then fold into lemon mixture.
Pour into a pastry-lined pie plate. Bake at 350 deg. for 35-40 minutes.
