Dill Salmon Packets w/ Asparagus

Ingredients

  • Cooking spray
  • 4 6 oz salmon fillets
  • 2 tbsp unsalted butter
  • 1/4 c chopped fresh dill
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 orange slices
  • 2 tbsp olive oil
  • 1 lb asparagus, trimmed

Step 1

Preheat grill to medium high heat.

Coat 4 pieces of foil with cooking spray; place 1 fillet in the middle of each. Top with 1 1/2 tsp butter and 1 tbsp dill. Top evenly with salt, pepper and orange slices. Bring edges of foil up and fold to seal around the fish. Place packets, seal side up on the grill; cover and grill for 12 mins or until desired degree of doneness. Remove foil packets from the grill.

Combine oil and asparagus in a bowl; toss. Place asparagus on grill; grill 5 mins or until crisp tender, turning once after 3 mins. Divide asparagus evenly among 4 plates. Top with fillets. Squeeze orange slices evenly over fillets.
