ROASTED SPAGHETTI SQUASH AND HERBS

Ingredients

  • 1 spaghetti squash, about 4 lbs, halved lengthwise,
  • seeds removed
  • 1 tbs olive oil + more for brushing
  • 1 tbs light-brown sugar
  • Kosher salt and pepper
  • 1/2 cup grated Parmesan cheese (2 1/2 oz)
  • 1/2 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 1/4 cup blanched hazelnuts (1 oz) toasted and chopped

Preparation

Step 1

Preheat oven to 400. Brush cut sides of squash w/oil and sprinkle w/sugar, salt/pepper. Place squash, cut sides down on rimmed baking sheet. Roast until tender, about 45 min. Cool slightly, about 10 min.

Scrape squash w/fork to remove flesh in long strands. Place in large bowl. Add oil, cheese, parsley, cilantro, hazelnuts, 1 tsp salt/pepper to taste. Toss and serve immediately.
