HERB ROASTED TENDERLION WITH PEARS

Any left over pork/pears can be served over salad greens for another light meal.

Ingredients
- 2 pork tenderloins (about 1.5 lbs total), excess fat removed
- 2 garlic cloves, thinly sliced
- 1 tbs fresh thyme, minced
- coarse salt and ground pepper
- 4 bartlett pears, quartered and cored

Step 1
Preheat oven to 475. W/paring knife, cut 10 small slits in each tenderloin. Stuff slits w/garlic and thyme; season pork w/salt and pepper. In large oven proof skillet, heat oil over med. Add pork and cook, turning occ until golden brown on all sides, about 10 min.
Add pears to skillet. Transfer to oven and cook, tossing pears once, until temp of 145, about 10 min. Transfer to platter and rest 5 min. Season pan juices with salt/pepper and put into small bowl.
