Ingredients
- 1 cup BC Pinot Noir
- 4 skinless boneless chicken breast
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1 cup whipping cream
- 2 tablespoons fresh thyme, chopped
- 1 small bunch seedless red grapes
- salt and pepper, to taste

Preparation
Step 1
Coat chicken with oil and season with salt and pepper.
Melt butter in a saute pan over medium heat. Add chicken and cook for 5 minutes on each side, sealing in the flavor. Add wine to the pan and simmer for an additional 5 minutes, allowing the wine to reduce a little.
Stir in cream and thyme; reduce heat and cover for 10 minutes; stirring occasionally. Remove the cover and stir, reducing until consistency is thick and creamy; add the grapes and allow them to warm before serving.
