Roasted Salmon with wilted spinach

Ingredients
- 1/4 c orange juice
- 2 tbsp olive oil
- 2 tsp thyme leaves
- 2 lb salmon fillets
- 1 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp Cinnamon
- 1 tsp grated orange peel
- 1/2 tsp sea salt
- 1 bag (10 oz) fresh spinach leaves
- 1 tsp olive oil

Preparation
Step 1
Mix juice, 2 tbsp oil and 1 tsp thyme in glass dish. Add salmon turn to coat. Cover. Refrigerate 30 min.
Mix sugar, remaining spices and orange peel. Remove salmon from marinade. Place in foil lined baking pan. Discard any remaining marinade. Rub top of salmon evenly with spice mixture.
Roast ln 400 oven 10 min or until fish flakes easily with a fork. Heat 1 tsp oil in large non stick skillet on med. heat. Add spinach, cook 2 min or until wilted.
