COCONUT BEEF CURRY

Ingredients
- Slow Cooker
- 2 Tbsp. vegetable oil
- 2 lbs stewing beef, cut into 1/4 inch strips
- 2 onions, sliced
- 2 cloves garlic, minced
- 2 tbsp. paprika
- 2 tbsp ground cumin
- 1 tsp. ground cinnamon
- 2 tsp. red curry paste (or 1 tbsp. curry powder)
- 4 potatoes, peeled and chopped
- 1 bag (1 lb/500 g) baby carrots
- 2 tbsp tomato paste
- 1 can (14 oz/398 ml) coconut milk
- 1/2 cup water
- 1 tsp salt
- Chopped fresh cilantro

Step 1
In a large nonstick skillet, heat half the oil over medium-high heat. Cook beef in batches, adding more oil as needed, until browned all over. Return all meat to skillet.
Add onions, garlic, paprika, cumin, cinnamon and curry paste (or curry powder). Saute for 2 minutes, or until fragrant. With a slotted spoon, transfer mixture to slow cooker. Add potatoes and carrots.
In a small bowl, combine tomato paste, coconut milk, water and salt; mix well. Add to slow cooker, stir to combine with meat and vegetables.
