Lemon Potatoes

Ingredients

  • 2 pounds small new potatoes, or other type
  • 4 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • grated rind of 1/2 a lemon
  • salt and pepper
  • 1 teaspoon dried oregano, optional

Preparation

Step 1

Scrub or peel potatoes and if necessary cut into 2" pieces. Boil in plenty of salted water until barely tender. Drain and return to pot. Shake over heat to dry. Put in heated dish to keep warm.

Meanwhile: while potatoes are cooking, combine remaining ingredients and beat until creamy. Pour over cooked potatoes. Toss and serve warm, lukewarm, or chilled.
