Grilled Potatoes with Lome Mayonnaise

Ingredients

  • Lime Mayo:
  • 1 lb potatoes, unpeeled
  • 3 T butter, melted
  • 2 T chopped fresh thume
  • paprika, for dusting
  • 2/3 C mayonnaise
  • 2 tsp lime juice
  • finely grated rind of 1 lime
  • 1 clove garlic, crushed
  • pinch paprika
  • salt and papper

Preparation

Step 1

Cut the potatoes ito 1/2 " thick slices. Cook in boiling water for 5-7 minutes; should be quite firm. Remove with a slotted spoon and drain thoroughly.

Put on a foil-lined grill pan or thread on skewers. Brush the potateos with the melted butter and sprinkle with thyme. Season to taste with salt and pepper. Cook pan under preheated medoum heat for 10 minutes or skewers on the barbeque, turning once.

Meanwhile, make the lime mayonnaise.

Dust teh hot potato slices with a little paprika and serve with lime mayonnaise, with on the side or spread over the hot slices before serving.
