Chocolate Drizzle Kettle Corn

Ingredients
- 3 T oil
- 1/2 c popcorn kernels
- 1/4 c sugar
- 1 T light corn syrup
- 1/2 tsp fine sea salt
- Baking chocolate

Step 1
Place the oil and 3 popcorn kernels into a large non-stick pot or wok with lid. Turn the heat to just under medium. Cover. When you hear the 3 kernels pop, you will know that the oil reached the desired temperature. Add the sugar and corn syrup and stir till they liquefy. Immediately add the remaining popcorn kernels and salt. Stir once and cover. With pot holders, hold the pot and shake continually over the heat. Keep contents moving or the sugar will burn and popcorn will stick. Do not remove lid or kernels will shoot out. When popping slows remove from heat and transfer immediately to a large bowl. Shake more salt lightly around bowl and shake to distribute. When cooled, spread in one layer over large surface. Boil pot of water. Place squares of chocolate into strong Ziploc bag or disposable icing bag. Turn off fire and leave chocolate bag in to water until melted. Spread out popcorn on a table. When chocolate is completely smooth, but tiny hole at corner of bag and drizzle all over popcorn. Wait until hardened.
