Chili-Rubbed Skirt Steak with Tomato Corn Salad

Ingredients

  • Salad:
  • 1 lb skirt steak
  • salt & pepper
  • 2 tsp chili powder
  • 2 T. olive oil
  • 2 c. diced plum tomatoes
  • 1/2 c. corn
  • 2 T. red onion, diced
  • 2 tsp jalapenos, dieced
  • 1/4 c. olive oil
  • 2 tsp. balsamic vinegar
  • 1 tsp. chili poweder
  • salt & pepper
  • cilantro

Preparation

Step 1

Season steak with salt, pepper and chili powder. Heat olive oil over medium heat in a grill pan. Cook steak to desired doneness, transter to cutting board and let rest for 5-10 min. Slice into long, slender strips.

For salad, combine everything and salt and pepper to taste. Drape steak over salad and garnish with cilantro and a pinch of sea salt.
