Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 3/4 c. thin cream or milk
  • 3/4 c. strained stewed tomatoes
  • a little ground mustard
  • 1/8 tsp. baking soda
  • 2 c. finely cut strong cheese
  • salt
  • 1 or more egg yolks, if desired

Preparation

Step 1

Melt butter, add flour, add milk or cream. When thickened add hot tomatoes mixed with the soda. Lastly, add cheese, egg yolks if desired and seasoning.

Serve on toast as soon as cheese has melted.
