Orzo Salad with Watermelon and Feta

  • 1 cup 1 cup uncooked orzo or other small pasta
  • 2 cups 2 cups seedless watermelon, diced
  • 1/2 cup 1/2 cup feta cheese, crumbled
  • 1 tbsp. 1 tbsp. Extra virgin olive oil
  • 1/2 cup 1/2 cup fresh basil, thinly sliced
  • 1/8 tsp. 1/8 tsp. Pepper
  • 1 tsp. 1 tsp. salt



Step 1

Bring a large saucepan of salted water to boil. Stir in orzo and return to boil. Cook until done. Drain orzo and rinse under cold water. Allow to drain completely. Once orzo is cool, toss with remaining ingredients.
