Ingredients
- 1 1/2 tsp. cornstarch
- 1/4 cup cider vinegar
- 1 Tbsp. honey
- 1 tsp. Dijon mustard
- 1/4 tsp each salt and pepper
- 1 Tbsp. olive oil
- 1 pkg (14 oz.) kielbasa, sliced
- 2 red potatoes (8 oz) cut into cubes
- 1/2 cup sweet onion
- 1/2 cup chopped sweet red pepper
- 1/2 cup water
- 1 tsp. beef bouillon granules
- 1 pkg. (14 oz) coleslaw mix

Preparation
Step 1
In a bowl, whisk the first six ingredients until smooth. In a skillet with the oil, cook kielbasa, potatoes, onion and red pepper. Cook and stir 3-5 minutes until kielbasa is lightly browned.
Add water and bouillon. Bring to boil. Reduce heat and simmer, covered, 6-8 minutes or until potatoes are almost tender. Add coleslaw and cook, covered 4-6 minutes or until tender, stirring occasionally.
Stir cornstarch mixture and add to pan. Bring to boil; cook and stir 1-2 minutes or until sauce is thickened.
