Shrimp and Pineapple Kabobs

are 31 to 35 medium
shrimp per
pound and 21 to
30 large shrimp
per pound. Either
large or medium
shrimp can be
used in this
recipe.

kabobs. Garnish

Ingredients

  • 2 medium green bell peppers, cut into
  • 24 (3 -inch) pieces or small pearl or boiler onions
  • 24 (1 to I-1/2-inch) chunks fresh pineapple
  • 12 uncooked medium shrimp, shelled,
  • deveined
  • 1/2 cup purchased sweet and sour sauce
  • 1/2 teaspoon dicy mustard
  • 2 teaspoons chopped fresh chives or
  • 1 teaspoon freeze-dried chives

Preparation

Step 1

1) On each of twelve 4 to 6-inch wooden
skewers, thread 1 pepper piece, 1 pineapple
chunk, 1 shrimp, 1 pepper/onion piece, and 1
pineapple chunk. Place kabobs on broiler pan.
2) In small bowl, combine remaining
ingredients; mix well. Brush kabobs with sweet
and sour mixture.
3) Broil 4 to 6 inches from heat for 3 minutes.

Turn kabobs; brush with mixture. Broil an
additional 2 to 4 minutes or until shrimp
turn pink.
