Walnut and Blueberry Bran Pancakes

Ingredients

  • 1 1/2 c whole milk
  • 1 c instant oats
  • 3/4 c blend of whole wheat and white flour
  • 3/4 c blueberries
  • 1/2 c chopped walnuts
  • 1/4 c oat flour or oat bran
  • 1 T baking powder
  • 2 T honey
  • 1 t salt
  • 2 eggs beaten

Preparation

Step 1

Pour milk over oats and sift together flour, sugar, baking powder and salt. Lightly stir eggs into oat mixture. Add dry ingredients and honey, stir until combined. When the batter is mixed, stir in blueberries and walnuts. Ladle batches of the batter onto pregreased griddle and cook until tops are bubbly and edges look cooked.

Makes 10 pancakes
