Sweet Potato Patties

Ingredients
- Dipping Sauce:
- 1/2 cup plain Greek yogurt
- 2 T. OJ
- 1 T. honey
- Patties:
- 2 large sweet potatoes
- 1 1/2 T butter, softened
- 1 1/4 cups panko bread crumbs
- 3 green onions, white and light green parts, finely chopped
- 1/2 cup toasted pecan halves finely chopped an dtoasted
- 1/2 tsp. salt
- 1/4 tsp peppter
- vegetable oil

Preparation
Step 1
1.In a small bowl, stir together all the ingredients for dipping sauce. Cover and refrigerate until serving.
2. Peel the potatoes and chop them into large chunks. Place them in a large saucepan and cover with cold water. Bring water to a boil, then reduce the heat and simmer til tender, about 25 minutes. Drain in colander and let excess water evaporate, about 5 minutes.
3. Transfer the potatoes to a medium bowl and mash til smooth. Add remaining ingredients to bowl and mix til well blended.
4. Shape the mixture into patties and line baking sheet with paper towels.
5. Coat the bottom of the skillet with oil and warm over medium high heat. Fry the patties in batches until brown, about 3 minutes per side. Transfer to prepared sheet. Keep patties in 200 degree oven until all are done. Serve warm with dipping sauce.
