Ingredients

  • 2 eggs, slightly beaten
  • 2 3/4 cups sugar
  • 3/4 cup oil
  • 1 Tbsp oil
  • 1 15 oz can pumpkin puree
  • 4 cups flour
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 Tbsp cinnamon
  • 3/4 tsp nutmeg
  • 3/4 tsp ground cloves
  • 3/4 tsp allspice
  • 5 Tbsp flour
  • 5 Tbsp sugar
  • 3/4 tsp cinnamon
  • 3 Tbsp butter

Step 1

Streusel topping:
combine 5 Tbsp flour, 5 Tbsp sugar, 3/4 cinnamon. Cut in butter until mixture resembles coarse crumbs.
Muffins:
Combine eggs, sugar, all oil and pumpkin puree, mix well. Sift together flour, salt, baking soda, cinnamon, nutmeg, cloves and allspice in a different bowl. Add flour mixture to pumpkin mixture, combine until just blended. Fill greased or lined muffin tins. Sprinkle 2 tsp streusel over the top of the muffin. Bake at 350 for 35 min.
