Ingredients
- 1/2 cup plain yogurt
- 3 T vegetable oil
- 1 T lemon juice
- 2 egg whites
- 1/2 t. lemon extract(optional)
- 1-1/2 cups all-purpose flour
- 3/4 cup white sugar
- 2 t. baking powder
- 1/4 t salt
- 1 t. grated lemon zest
- 1 cup frozen raspberries
- 2 T white sugar for decoration (opt.)

Preparation
Step 1
1. Preheat the oven to 400. Grease a 12 cup muffin tin, or line with paper liners.
2. In a large bowl mix together the yogurt, oil, lemon juice, egg whites and lemon extract. In a separate bowl, stir together the flour, 3/4 cup sugar, baking powder, salt, and lemon zest. Add the wet ingredients to the dry and mix until just blended. Gently stir in the frozen raspberries. Spoon batter evenly into the prepared muffin cups. Sprinkle with sugar, if desired
