Ingredients

  • 2 lbs. red potatoes,unpeeled and cubed
  • 2 medium tart apples, peeled and quartered
  • 1/2 tsp salt
  • 1/2 cup sour cream, room temperature
  • 3 Tbsp unsalted butter, softened
  • 1 Tbsp fresh chopped thyme
  • 1/4 tsp ground pepper

Preparation

Step 1

Place the potatotes, apples and salt in a large saucepan; add enough water to cover. Bring to a boil; cover and cook for 12 minutes or until tender.

Drain the potatoes and apples.

Add the sour cream, butter, thyme, salt & pepper; mash until smooth.
