Very moist delicious brownies. Shred and bag 2 cups zucchini and freeze to enjoy year round.

Ingredients

  • Cream Cheese Frosting:
  • 1 1/2 cup sugar
  • 1/2 cup oil
  • 1/4 cup cocoa
  • 2 cup zucchini (shredded)
  • 2 1/2 cup flour
  • 1 1/2 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup chopped nuts
  • 1 cup powdered sugar
  • 4 Tablespoons margarine
  • 1 teaspoon vanilla
  • 6 oz. cream cheese

Preparation

Step 1

Combine above ingredients, spread in oblong pan. Bake at 350° F. for 20 - 30 minutes.

Note: 30 minutes for 6 small loaf pans


Frosting:
Cream together cream cheese and margarine, add powdered sugar until proper consistency. Use clear vanilla if available.
