Blue Cheese-Turkey Burgers with Apple Chopped Salad Sandwiches

Because of its mild flavor, ground turkey takes easily to a variety of seasoning options. Here it’s jazzed up with zesty barbecue sauce and tangy blue cheese.

Ingredients

  • BURGERS
  • 8 lean ground turkey patties (about 2 lb.) or 2 lb. lean ground turkey shaped into 8 patties
  • 1 teaspoon coarse salt
  • 1/4 teaspoon pepper
  • 4 oz. tangy blue cheese, such as Roquefort or Stilton, crumbled (about 1/2 cup)
  • 1/2 cup barbecue sauce
  • 4 hamburger buns, split
  • SALAD
  • 2 ribs celery with leafy tips, chopped
  • 1 apple, such as Fuji or Granny Smith, unpeeled, chopped
  • 3 tablespoons purchased blue cheese dressing

Preparation

Step 1

1. Sprinkle turkey patties with salt and pepper. Place 2 tablespoons cheese in center of each of 4 patties; top with remaining 4 patties. Press edges together to seal.

2. Heat heavy large nonstick skillet over medium-high heat until hot (use 2 pans if necessary so burgers aren’t crowded). Cook 13 to 15 minutes or until thoroughly cooked and no longer pink in center, turning once. Spoon barbecue sauce over burgers; cook 1 to 2 minutes or until browned and sauce is caramelized, turning once. Place in buns.

3. Meanwhile, toss all salad ingredients in medium bowl. Serve with burgers.
