Banana-Carrot Bread

Ingredients
- 1 cup very ripe bananas, mashed, about 3 banans
- 1 cup brown sugar
- 3/4 cup vegetable oil---or 3/4 cup applesauce
- 2 eggs
- 2 cups flour
- 1 Tsp. baking soda
- 1/2 tsp. salt
- 1 cup finely chopped or grated carrots
- 1 cup chopped pecans

Step 1
Grease and flour a 9"x 5" by 3" loaf pan. Preheat oven to 350 degrees. See note below.
Combine bananas, sugar, oil and eggs with electric mixer on medium speed, until well mixed, about 2 minutes.
Add flour, baking soda and salt on low, until just incorporated. Stir in carrots and nuts.
Pour into prepared pan and bake 45-50 minutes, until a toothpick inserted in the center comes out clean. Se aside to cool on a rack for 15 minutes. Remove from pan, invert onto rack and cool completely before slicing.
NOTE: If you use a glass pan, bake at 325 degrees--metal pan, 350 degrees.
