Ingredients
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon pepper
- 4 1/2 cups (1-inch) cubed peeled sweet potato (about 1 1/2-pounds)
- 4 teaspoons olive oil divided
- 2 (3/4-pound) pork tenderloins
- Cooking spray
- 4 large Granny Smith apples each peeled and cut into 6 wedges

Step 1
Preheat oven to 500º.
Combine first 4 ingredients in a small bowl. Combine sweet potato, 1 teaspoon spice mixture, and 3 teaspoons oil; toss well. Trim fat from pork; rub remaining spice mixture over pork. Drizzle 1 teaspoon oil over pork.
Arrange sweet potato in a single layer in a 15 × 10-inch jelly-roll pan coated with cooking spray; bake at 500º for 10 minutes. Add apples and pork; bake an additional 20 minutes or until meat thermometer registers 160º (slightly pink), turning sweet potato, apples, and pork after 10 minutes.
Serving Size: 3 ounces pork, 3/4 cup sweet potato, and 4 apple wedges
