  • 1 cup flour
  • 1/2 cup butter
  • 1/4 cup icing sugar
  • 1 cup sugar
  • 2 eggs
  • 2 tsp grated lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp baking powder



Step 1

Heat oven to 350F Mix flour, butter and icing sugar together in food processor until dough is crumbly. Press into un-greased 8x8 pan. Bake for 20 minutes till light brown. Beat remaining ingredients until fluffy. Pour over crust and return to oven for 25 minutes. Sprinkle with icing sugar when cool.
