Ingredients

  • Topping:
  • 3 c cold mashed sweet potatoes(prepared without milk or butter)
  • 1 c sugar
  • 1/2 c milk
  • 1/4 c butter, softened
  • 3 eggs
  • 1 teas salt
  • 1 teas vanilla extract
  • 1/2 c packed brown sugar
  • 1/2 c chopped pecans
  • 1/4 c flour
  • 2 T cold butter

Preparation

Step 1

In a mixing bowl, beat sweet potatoes, sugar, milk, butter, eggs, salt, and vanilla until smooth. Transfer to a greased 2 qt. baking dish. In a small bowl, combine brown sugar, pecans, flour and cut in butter until crumbly. Sprinkle over potato mixture. Bake uncovered at 325 for 45-50 minutes or until golden brown.
