Creamy Curried Baked Cauliflower

Ingredients
- 1 head cauliflower, stemmed and broken into florets
- 1 teaspoon cumin seeds
- 2 whole cloves
- 1 teaspoon ground cinnamon
- 2 teaspoon Indian curry powder
- 1 pinch coarse salt
- 1 tablespoon extra-virgin olive oil
- 1 cup heavy cream
- 1/2 cup fresh cilantro

Preparation
Step 1
Preheat oven to 375° F.
2. In a small skillet, toast the cumin seeds and cloves until fragrant, two minutes. Transfer to a mortar and pestle and crush into a powder.
3. In a small bowl, combine all the spices, including the salt.
4. Arrange the florets on a rimmed baking sheet. Toss with the oil and then sprinkle with the spice mix. Roast for 15 minutes.
5. Transfer florets to a cast iron skillet. Pour the cream over the dish, stick back in the oven and roast another 15 minutes, or until tender.
6. Garnish with fresh cilantro and serve immediately!
