SESAME CHICKEN AND ASPARAGUS PASTA

Ingredients

  • 5 T. tossed sesame seeds
  • 1 lb. linguine
  • 3 cloves garlic minced
  • 1 T. red wine vinegar
  • 1 T. brown sugar
  • 6 T. chunky peanut butter
  • 1/4 c. soya sauce
  • 6 T. sesame oil
  • 1 T. hot chile oil
  • 2 boneless, skinless chicken breast halves, marinated in Italian dressing & Dijon mustard & grilled on grill
  • 1 .lb. asparagus
  • 3 scallions, white bulb & 3” green, cut into 2” julienne
  • 1 small cucumber, seeded cut into dice

Preparation

Step 1

Place garlic, vinegar, brown sugar, peanut butter & soya in blender. Slowly add sesame & chile oils with blender running.

Cut asparagus on diagonal into 1” lengths. Blanch in boiling water for a 1 minute. Rinse in cold water and dry.

Cook chicken on grill. Shred into 2” julienne.
