SESAME CHICKEN AND ASPARAGUS PASTA

Ingredients
- 5 T. tossed sesame seeds
- 1 lb. linguine
- 3 cloves garlic minced
- 1 T. red wine vinegar
- 1 T. brown sugar
- 6 T. chunky peanut butter
- 1/4 c. soya sauce
- 6 T. sesame oil
- 1 T. hot chile oil
- 2 boneless, skinless chicken breast halves, marinated in Italian dressing & Dijon mustard & grilled on grill
- 1 .lb. asparagus
- 3 scallions, white bulb & 3” green, cut into 2” julienne
- 1 small cucumber, seeded cut into dice

Preparation
Step 1
Place garlic, vinegar, brown sugar, peanut butter & soya in blender. Slowly add sesame & chile oils with blender running.
Cut asparagus on diagonal into 1” lengths. Blanch in boiling water for a 1 minute. Rinse in cold water and dry.
Cook chicken on grill. Shred into 2” julienne.
