Strawberry Pizza

This is a staple at all family celebrations at Hank and Kathy's farm. Hank's Mom, "Granny", was the one to always make this. Now, Stephanie does the honors. Zach could eat it (and has) as his entire meal for the day! When I asked Granny for the recipe years ago, she told me it was made with "Oleo"? I remember going to the grocery store and asking everyone what is or where could I find Oleo? Turns out, it is margarine! Granny likes to use Blue Bonnet, and so do I! When making the crust, it sometimes seems like it won't be enough. But, use your fingers to press the dough into a half sheet pan (I always put down a silpat first), it should be very thin. That's what makes it good!

Ingredients
- 2 cups flour
- 2 sticks margarine (Blue Bonnet)
- 1/2 cup powdered sugar
- 8 oz. cream cheese, softened
- 8 oz. cool whip, defrosted
- 1 cup powdered sugar
- 1 quart strawberries, washed, dried, hulled and sliced thin
- 1 package strawberry glaze. (I usually use Marzetti's in a tub. But, if you can find it in a bag, that is best!)

Step 1
To make the crust:
Mix together the flour, margarine and powdered sugar and put together on a baking sheet (half sheet) with your fingers, pressing together (it should be very thin). Bake at 350 degrees for 15 minutes. Let cool completely. It is easier at this point if you cut the crust into squares before topping.
To make the topping:
Whip the cream cheese, cool whip and powdered sugar together with a hand mixer and spread evenly over the cooled crust. Combine the strawberries and the glaze and spread on top of the cream cheese mixture. Slice some fresh strawberries on top, if desired.
