Raspberry White Chocolate Brownies

Ingredients

  • 1/2 cup butter
  • 2 oz. white chocolate baking bar or squares (with cocoa butter), chopped
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 Tbsp raspberry liqueur
  • 1 1/4 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • Dash of salt
  • 1 cup fresh raspberries and/or blackberries

Preparation

Step 1

1. Preheat oven to 350 degrees. Line an 8x8x2" baking pan with foil, extending foil over edges of the pan. Grease foil; set pan aside.

2. In a med saucepan, combine butter and white chocolate; heat and stir over low heat until melted. Remove from heat. Stir in eggs, granulated sugar, brown sugar and liqueur. Using a wooden spoon, beat lightly just until combined. Stir in flour, baking powder, baking soda and salt.

3. Spread batter in the prepared pan. Sprinkle with berries. Bake about 30 min. or until golden brown and a toothpick inserted near center comes out clean. Cool in pan on a wire rack. Using the edges of the foil, lift the uncut brownies out of the pan. Cut with a 2" round cutter and/or cut into squares or bars.
