Lentil Soup with Swiss Chard and Lemon

Ingredients

  • 1 cup brown lentils
  • 4 cups water
  • 4 cups chicken stock
  • 1 large bunch of swiss chard, stems removed, washed
  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1/2 cup fresh cilantro or coriander leaves, chopped
  • salt and fresh ground pepper
  • 1/3 cup lemon juice
  • lemon wedges

Preparation

Step 1

1) Wash the lentils and place them in a large pan with water and chicken stock. Bring to a boil, cover and simmer until tender, about 1 hour.

2) Remove the stems from the Swiss chard. Wash well and chop coarsely.

3) Heat the oil in a skillet. Add the onions and sautee until soft, 10 minutes. Add the garlic and continue to sautee for 2 minutes. Add the Swiss chard, cover and cook for 1 minute. Uncover and continue to cook until the Swiss chard wilts, stirring often, 3-4 minutes.

4) Add the onions, garlic, Swiss chard, cilantro, salt and pepper to the lentils. Stir well and add the lemon juice. Cover and simmer slowly 15 minutes. Taste and season with salt, pepper, and more lemon juice if needed.

5) To serve, heat the soup and ladle into bowls. Garnish with lemon wedges.
