Ingredients

  • 1 can pumpking (28 oz) NOT pumpkin pie mix
  • 1 can evaporated milk (12oz)
  • 3 each eggs
  • 1 cup sugar, mix w/spices & salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1 box yellow cake mix (18.25 oz)
  • 1 cup shredded coconut
  • 1/2 cup margarine, slice
  • 1 cup chopped walnuts

Preparation

Step 1

MIX pumpkin, milk, eggs. Mix the sugar and spices together and put in with the pumpkin mixture. Pour into a 9x13 pan. Thoroughly break up lumps in yellow cake mix and sprinkle evenly over pumpkin mixture. Then sprinkle coconut and walnuts over the mix. Then dice margarine and space over the top of the cake including the corners. Bake at 350 for 45 minutes.
