  • 6 lg. potatoes
  • 2 C. flour
  • 1/2 tsp. cayenne
  • 2 tsp. thyme
  • salt and pepper to taste
  • 1/2 C. milk
  • olive oil for frying

Preparation

Step 1

preheat oven to 425*
prick potatoes with fork, wrap in foil, and bake for about 1 hour(or until done)
let cool. cut potatoes into wedges, heat oil to 375* stir together flour, cayenne, thyme, salt and pepper. dip wedges in milk,
then dredge in flour mixture, deep fry for without overcrowding about 1 & 1/2 minutes until crisp and golden brown. drain on paper towel
