Ingredients
- Pie shells for double crust pie
- 2 pints blueberries
- 1 lemon
- 1 cup + 2 tsp. sugar
- 1/3 cup flour
- 1/2 tsp. cinnamon
- 1 egg

Step 1
Preheat oven to 425*. In bowl, grate 1/4 tsp. zest from lemon and squeeze 1 Tblsp. juice. Combine with blueberries, 1 cup sugar, flour, and cinnamon. Place pie shell on cookie sheet and fill with blueberry mixture. In small cup, beat egg with 1 Tblsp. water. Top pie with 1/2" strips of pie crust. Brush edges with egg glaze and sprinkle top with 2 tsp. sugar. Bake 15 min. Reduce heat to 365* and continue baking for 35-40 minutes.
