Ingredients
- 8 ears of corn
- olive oil for brushing the corn
- 3/4 stick unsalted butter (cut into chunks)
- juice of 1 lime
- salt and pepper to taste

Preparation
Step 1
Preheat grill to medium. Clean the corn and boil in a large pot of water for 5 minutes. Brush corn with olive oil and grill until slightly charred on all sides (about 2 minutes). Remove from grill and with a sharp knife and cut kernels from corn. Place hot corn, butter and lime juice in bowl and toss. Add salt and pepper to taste.
SHORTCUT ALERT: Just make frozen corn and add the butter and lime, no one will miss the grilling!
NOTE: Some people like to add diced red and green pepper to give this dish some color but I'm a purist and like just corn.
