Shrimp Stuffed Potatoes

Ingredients
- 6 large Idaho potatoes
- 8 tablespoons butter
- 2 cups cheddar cheese, grated
- 2 cups monterey jack cheese, grated
- 2 cups sour cream
- 1 pound shrimp, peeled and sauteed

Preparation
Step 1
1. Preheat oven to 350 degrees. Wash and dry potatoes and prick with a fork. Coat with oil, place on foil covered pan and bake for 1 hour.
2. Place butter in large bowl. Remove potatoes from oven and slice each in half. Scoop out potatoes and place in bowl. Using a mixer on high, mix potatoes, butter, sour cream and salt and pepper to taste. Fold the shrimp and both cheeses into the mixture.
3. Gently stuff mixture back into potato shells, making sure not to break them. Pile the mixture as high as you can on top of the shells. Sprinkle each with cheese and paprika for color. Bake in oven for approximately 20-30 minutes until browned on top.
