  • TAFELSPITZ:

    pounds beef eye of round

  • 1

    orange carrot

  • 1

    yellow carrot

  • 1

    celery root

  • 1

    leek

  • 1

    parsley root

  • APPLE HORSERADISH SAUCE:

  • 3

    apples - (to 4)

  • Juice of 1/2 lemon

  • 3

    tablespoons finely-grated horseradish

  • 1

    teaspoon vinegar

  • Sugar to taste

  • Salt to taste

Directions

Tafelspitz: Bring water to a rolling boil in a pot large enough to fully submerge beef. Put beef and the above ingredients (thoroughly cleaned, but whole) into the boiling water. Simmer 1 1/2 hours until done. Remove and cut against beef fibers. Apple Horseradish Sauce: Sprinkle peeled apple quarters with lemon juice. Bake at 350 degrees about 25 minutes until soft. Puree soft apples with horseradish and vinegar. Add sugar and salt to taste. This recipe yields ?? servings.
