Ingredients

  • 1

    Spaghetti Squash

  • 2

    large chicken breasts, cooked and cubed

  • 2

    garlic cloves, minced

  • ½

    medium onion, chopped

  • 1

    jar (24 oz.) spaghetti sauce

  • 1

    cup mozzarella cheese

  • 2

    pieces whole grain bread, cubed

  • dash of extra virgin olive oil

  • 1

    T parsley

  • 2

    t rosemary

  • 2

    t thyme

  • 2

    t sage

  • salt and pepper, to taste

Directions

Preheat oven to 350 degrees. Grease a 9 X 13 baking dish with olive oil and set aside. Cook squash, either microwave or oven roasted. Shred squash with a fork, mix in the garlic and transfer to the greased baking dish. Sprinkle the top of the spaghetti squash with 1/2 of the parmesan cheese, some salt and 1/2 of all of the spices. Sprinkle the mozzarella cheese over the spaghetti sauce, followed by the cubed bread and the remaining parmesan cheese and spices. Bake in the oven 50 minutes to one hour. Remove from oven, allow to sit for 5 minutes and then serve.
