Ingredients
- 2 C. all purpose flour
- 1/3 C. yellow cornmeal
- 2 1/2 Tsp. baking powder
- 1/2 Tsp. salt
- 1/3 C. cold butter
- 1 C. mashed sweet potato
- 1/2 C. fat free milk
- 2 Tbsp. honey

Step 1
In large bowl, combine flour, cornmeal, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in sweet potato, milk, and honey just until moistened. Turn onto a lightly floured surface; knead 5-8 times. Pat out 1/2 inch thickness; cut with a floured 2 inch biscuit cutter.
Place 2 inches apart on an ungreased baking sheet. Bake at 400 degrees for 14-18 minutes or until lightly browned. Serve warm.
