Cornbread and Sausage Quiche

This really isn't a quiche per se, it just has a lot of eggs in it. The taste is awesome, and it is simple to make. We eat this for dinner more than we do for breakfast.

Ingredients

  • 6 eggs, beaten
  • 3/4 c milk
  • 1/2 c water
  • 2 c grated sharp cheddar
  • 40 oz can diced green chilies
  • 1 lb bulk sausage, cooked and drained
  • 1 6 oz bag cornbread stuffing
  • salsa and sour cream for topping

Preparation

Step 1

Cook and drain sausage. Preheat oven to 425.

In a large bowl, beat eggs and then whisk in milk. Add cheese, chilies, water and sausage. Fold in stuffing. Pour into a greased 9x13 pan. Cover and bake 40 minutes or until eggs are set.

Top with salsa and sour cream.
