Ingredients

  • Topping:
  • 4 c. mashed sweet potatoes
  • 1 c. sugar
  • 2 eggs
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1/3 stick butter or margarine (melted)
  • 1 tsp. vanilla
  • 1 c. brown sugar
  • 1/2 c. flour
  • 1 c. pecans (chopped)
  • 1/3 c. butter or margarine (melted)

Preparation

Step 1

Cook sweet potatoes in boiling water for 30-45 minutes, or until soft. Cool slightly and peel skins.

Mash potatoes in mixer and add all other ingredients.

Pour potato mixture into buttered casserole dish.

Mix topping ingredients and crumble evenly over potato mixture.

Bake at 350 for 35-45 minutes, uncovered.
