Garlic Green Beans with Flavored Oil

Ingredients
- 1 1/2 lbs green beans
- 1 clove garlic, chopped
- 1 tsp salt
- 1 tbsp balsamic or red wine vinegar
- 1 tbsp walnut or sesame oil
- Garnish: tomato, cut in wedges, or 1/4 cup (50 mL) thinly sliced red cabbage

Preparation
Step 1
1. Remove Stem ends from green beans. In large pot of boiling water, cook beans for 4 to 5 mins or, until tender; drain and cool under cold water Drain well.
2 On serving platter and using pestle or back of fork. crush garlic with salt to form paste, stir in vinegar then oil.
3 Add green beans: Stir to coat In garlic mixture. Let stand for 15 minutes.
4 Garnish with tomato or red cabbage. Makes 8 servings
Make ahead through step 1, wrap in paper towels then place In plastic bag and refrigerate for up to 1 day Through step 2 for up to 2 hours.
