Strawberry Cool Whip Cookie

Strawberry cookies are so easy with this cake mix-based recipe! Rolling the cookie dough in powdered sugar before baking gives them a sweet, crinkly coating.

- 1 (8 ounce) container Cool Whip (I used Lite)
- 2 eggs
- 1 (18.25 ounce) box strawberry cake mix
- 1/3 cup powdered sugar, for rolling

Preparation
Step 1
Preheat oven to 350°F. Spray cookie sheet with cooking spray or line with parchment paper.
Beat together Cool Whip and eggs in a medium sized bowl.
Add the cake mix and stir together. Dough will be thick and sticky. Chill in refrigerator for 30 minutes.
Pour about 1/3 cup of powdered sugar into a small bowl. Drop chilled dough by tablespoon (I used a cookie scoop) into powdered sugar and roll dough around until covered. Place on cookie sheet.
Bake 9-12 minutes, depending on size of cookies.
Cool on baking rack and then ENJOY!!
