Blueberry Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 3 teas. baking powder
  • 1/2 teas. salt
  • 1 egg, well beaten
  • 2/3 cup milk
  • 1/3 cup canola oil
  • 1 cup blueberries



Step 1

Heat oven to 400*. Line with paper baking cups or grease (not oil) bottoms only of 12 muffin cups. In medium bowl, combine first 4 ingredients. Stir in remaining ingredients just until dry ingredients are moistened. Batter will be lumpy. Spoon batter into prepared muffin cups, filling 2/3 full. Bake at 400* for 15 - 20 minutes or until golden brown. Run knife around edge to loosen; immediately remove from pan. Serve warm.
